An incredibly popular ingredient in Swedish cuisine, pickled herring can be prepared in more ways than we can count! A must-have for the smörgåsbord, this herring and potato salad recipe lightens the salty flavor of the fish with starchy potatoes and a delicious dressing. Crumbled potato chips garnish the dish in the signature Swedish fashion.
INGREDIENTS
- 1 lb. Yukon gold potatoes, halved
- 3 Tbsp. crème fraîche or sour cream
- 1 Tbsp. Liss Ellas sweet and hot mustard
- Zest and juice of 1 lemon
- Salt and black pepper
- ¼ lb. pickled herring, thinly sliced
- ¼ cup chopped chives, plus more for garnish
- Potato chips, crumbled
DIRECTIONS
1. Bring a large pot of salted water to a boil. Add the potatoes and boil until fork-tender, about 25 minutes. Drain and transfer the potatoes to a bowl. Coarsely chop into large chunks.
2. In a large mixing bowl, whisk together the crème fraîche or sour cream, mustard, lemon zest and juice, and salt and pepper. Add the herring, chives, and potato chunks. Carefully toss until the dressing is evenly distributed.
3. To serve, transfer the salad to a serving bowl and garnish with the potato chips and additional chives.
