Emma Bengtsson’s Licorice-Infused Aquavit

Makes: about 8 oz. aquavit • Time: 5 minutes, plus 2 days infusing

Aquavit is vodka that’s been infused with aromatics. The process is easy to do yourself! Simply allow your seasonings—fruit (apples, pears, berries, etc.), spices (cinnamon, allspice, caraway, cardamom, etc.), or a combination of both all work well—to sit in a bottle of vodka for several days. Once the preparation is ready, drink it as it or mix into a cocktail. Here, curating chef Emma Bengtsson infuses vodka with licorice from the Sweden Box.

INGREDIENTS

  • 8 oz. vodka
  • One 1.4 oz package Lakritsfabriken sweet licorice

DIRECTIONS

In a jar, combine the vodka and licorice. Seal with a tight lid and chill in the freezer for 2 days.

 
Emma Bengtsson is the curator of the Sweden Box. Originally from a small town on Sweden’s western coast, she grew up learning the secrets of Nordic cuisine from her grandmother. After discovering her talent for pastries and working in a variety of notable restaurants in Sweden, she moved to New York and led Aquavit to become a two-star Michelin restaurant as its executive chef.
