Committed to preserving the culinary traditions of Portugal, Casa Lucena specializes in making olive oil, honey, jam, salt, and, of course, cookies according to old, Portuguese recipes. We love eating them straight from the box, but they’re also a versatile ingredient in many dishes. We spoke to Priska Hirschmugl Lucena, the company’s founder, who gave us a few ideas.
1. Crumble into pie crust
Instead of graham crackers or Oreos, make a pie crust by crushing Casa Lucena cookies into a powder, mixing them with melted butter, and pressing the dough into a pie dish. This crust is a great base for fruit tarts and cheesecake.
2. Whip up a milkshake
Blend 2 scoops of your favorite ice cream with milk and Casa Lucena cookies. The result is an indulgent, creamy milkshake that makes for a delicious dessert or midnight snack.
3. Dip into chocolate
Melt chocolate over a double boiler (a heat-safe bowl placed over a saucepan of boiling water) or in the microwave (using 20-second bursts). Dip the cookies into the melted chocolate and place on parchment to cool and dry.
4. Top a dessert
From cupcakes to sundaes, doughnuts to muffins, crumbled Casa Lucena cookies are a delicious crunchy topping that adds light texture and sweet flavor to any dessert.
